Vegan Snickers Protein Bars! 20g of Protein per Bar!

Ingredients: 1st layer – Cookie layer
Vegan Pea protein powder
15 tbsp (each tbsp is 8 g of protein)
Oat flour 1/2 cup
Rice flour 1/2 cup
Peanut butter 340 g
Water 7 tbsp

2nd layer – Caramel (if you want a thicker caramel layer, simply double these ingredients)
Pitted medjool dates1 cup
Maple syrup 2tbsp
Water 1 tbsp
Peanuts 1/2 cup

3rd layer- Chocolate coating
Vegan chocolate 200g
Coconut oil 1 tsp *optional

How to make vegan snickers protein bars Place the rice flour, oat flour, peanut butter, water, pea protein and maple syrup in a food processor and process and until all the ingredients are combined and a dough ball forms. It will be a little crumbly. Take it out of the food processor and place the dough ball on to some parchment paper where you will shape with your hands, the dough into a rectangle. It should be big enough that you will be able to cut 11 bars from this recipe. Once you have shaped the dough into a rectangle, place it in the freezer for about an hour. In the meantime lets make the second layer which is the caramel layer. Place the dates into the food processor along with the maple syrup and water and process until you get a creamy consistency. If you want the caramel to be sweeter go ahead and add more maple syrup. After an hour has passed you will remove the dough from the freezer and evenly spoon the caramel on to the first layer. Top it with whole peanuts and into the freezer it goes for about an hour. After an hour remove the dough from the freezer and set aside because its time to melt the chocolate. Using the double boiler method place the chocolate into the saucepan and melt. Once its fully melted its time to cut 11 bars out of the dough and cover each bar with chocolate. You want to make sure the top sides and bottom are covered. If you are watching your fat intake simply drizzle some of the chocolate on top of the bars as there is no need to fully cover the whole bar in chocolate. Once that is done you can keep them in the fridge, but they are also great at room temperature. Vegan snickers protein bars contain 20 g of protein and are low in fat! Enjoy!!!
